Project Overview

My present work focuses on the utilization of fruit and vegetable waste to extract antioxidant dietary fiber and its possible use to develop a functional food. I am using pineapple waste to extract the antioxidant dietary fiber. At Queen’s, I aim to work on the human cell line to study the antidiabetic effect of the developed functional food. This study will provide a perspective to understand the effects of these antioxidant dietary fibers better for diabetic patients and can help to develop new methods for utilizing the waste into functional food.
